Here's a tip for catching these. Once you see the

 Something caught the hook!!!

message, don't touch your keyboard or controller. Watch the stamina bar, and if it moves down on its own with no interaction from you, let it go. It's a monster. Otherwise, it's a squid. Once I figured this out, I never fished up a monster.

These are fairly easy to reel in. I started fishing these at 62 and had no real issue, although several got away due to the level difference.
